    Preheat oven: Preheat your oven to 450ยฐF.

    Combine dry ingredients: Combine flour, baking soda, baking powder, and salt in a bowl or food processor.

    Cut in butter: Cut butter into chunks and cut into the flour until it resembles coarse meal. If using a food processor, pulse a few times until this consistency is achieved.

    Add buttermilk: Add buttermilk and mix just until combined. If the dough appears dry, add a bit more buttermilk. It should be very wet.

    Shape the dough: Turn the dough out onto a floured board. Gently pat (do not roll with a rolling pin) the dough out until about 1/2 inch thick. Fold the dough about 5 times, then gently press down to 1 inch thick.

    Cut biscuits: Use a round cutter to cut into rounds. Gently knead scraps together for a few more, but these won't be as good as the first ones.

    Bake: Place biscuits on a cookie sheet โ€” touching each other for soft sides, or about 1 inch apart for crusty sides. Bake for 10โ€“12 minutes until light golden brown on top and bottom. Do not overbake.
