One-Pot Chicken Parmesan Pasta

A one-pot weeknight pasta with bite-sized chicken, a jar of marinara, and penne cooked right in the sauce, finished with melty mozzarella. Kid-friendly, no wine or olives.

    Heat the olive oil in a large deep skillet or pot over medium-high heat. Add the chicken and sprinkle with Italian seasoning, garlic powder, salt, and pepper. Cook about 4 minutes until golden and cooked through, then remove to a plate.

    Add the minced garlic to the pot and cook 30 seconds until fragrant.

    Pour in the marinara and water. Bring to a strong, steady simmer, then stir in the penne. Cover.

    Cook 11-15 minutes, stirring several times so the pasta doesn't stick, until the penne is al dente.

    Stir the chicken back in. Add the mozzarella a handful at a time, stirring between additions, then stir in the Parmesan. Taste and adjust seasoning.
