Garlic Butter Baked Cod

Tender cod fillets baked under a simple garlic-butter-parsley paste with lemon — fast, mild, and kid-friendly. Works great with frozen cod.

Preheat oven to 400°F. If using frozen cod, thaw in a sealed bag under cold water for 10-15 minutes, then pat dry.

In a small bowl, combine the butter, olive oil, garlic, paprika, salt, and parsley. Stir into a fairly smooth paste.

Place the cod fillets in a baking dish. Spread the garlic-butter mixture evenly over each fillet.

Slice half the lemon and lay the slices on top of the fish; cut the other half into wedges for serving.

Bake 15-20 minutes, until the fish flakes easily and reaches 145°F internal (thicker fillets or ceramic dishes may take longer).

Spoon the pan juices over the fish and serve immediately with lemon wedges.
