Classic Beef and Bean Chili

The plain, mild, one-pot chili everybody grew up on: ground beef, two cans of beans, diced tomatoes, and tomato paste. Serve with shredded cheddar and crackers. Adapted from Budget Bytes.

    Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic and cook until soft and translucent, about 5 minutes.

    Add the ground beef and cook, breaking it up, until fully browned. Drain off excess fat if needed.

    Stir in the kidney beans, black beans, diced tomatoes with their juices, tomato paste, and water.

    Add the chili powder, cumin, cayenne, garlic powder, onion powder, brown sugar, salt, and pepper. Stir until the tomato paste is fully incorporated.

    Cover and simmer over low heat at least 30 minutes, stirring occasionally. Add a splash of water if it gets too thick.

    Taste and adjust salt. Serve hot topped with shredded cheddar and sour cream, with crackers or tortilla chips.
