Cook the rice.

Cook the bacon in a dutch oven until cooked but not crispy.

Cook the veggies and sausage: In a large pot or Dutch oven, heat 1 tablespoon olive oil over medium heat. Add 1 small onion, diced, 1 green bell pepper, diced. Sauté 5–7 minutes until soft. Add 2 garlic cloves, minced and cook 1 minute more. Stir in sliced sausage and cook until lightly browned, about 3–4 minutes.

Simmer the beans: Add 2 teaspoons Cajun seasoning, 0.5 teaspoons dried thyme, 1 teaspoon smoked paprika, 0.25 teaspoons black pepper, and 1 tablespoon tomato paste. Stir well. Add 2 cans red kidney beans, drained and rinsed, 2 cups low-sodium chicken broth, and 1 teaspoon soy sauce. Bring to a simmer. Reduce heat, cover partially, and let simmer 20–25 minutes, stirring occasionally. If too watery, remove lid and simmer uncovered last 5–10 min until thickened.
