    Mix wet ingredients: In a large bowl, mix 1 pieces ripe banana, mashed, 2 pieces large eggs, 1 cups milk, 1 teaspoons vanilla extract, and 2 tablespoons maple syrup (plus more for serving) until combined.

    Add dry ingredients: Add 1 cups rolled oats, 1 cups all-purpose flour, 2 teaspoons baking powder, and 0.5 teaspoons cinnamon to the wet ingredients. Stir until just combined โ€” a few lumps are fine. Let rest 5 min.

    Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Add a small amount of 1 tablespoons butter or cooking spray for pan. Pour about 1/4 cup batter per pancake. Cook until bubbles form on the surface and edges look set, about 2โ€“3 min. Flip and cook another 1โ€“2 min.
